Chicken Adobo With Coconut Milk

  • 1 medium-sized chicken
  • 1½ cup thick coconut milk
  • 2 cup thin coconut milk
  • 1 cup vinegar
  • 1 clove garlic, crushed
  • Salt and pepper to taste

Soak chicken in vinegar, garlic, salt and pepper. Place in saucepan and bring to a boil. Cook for 5 minutes. Add the thin coconut milk, cook till chicken is done. Then add the thick coconut milk. Continue cooking for 15 minutes until the coconut milk is a little oily. Serve hot.
