Oven Kalua Pork
- 3 Tbsp. Hawaiian salt
- 2 Tbsp. aji
- 1/4 c. soy sauce
- 1 tsp. Worcestershire sauce
- 1 clove garlic, crushed
- 12 large ti leaves
- 5 lb. pork roast
- 1 small piece ginger root, crushed
In a small bowl, combine salt, aji, soy sauce, Worcestershire sauce, garlic and ginger. Wash ti leaves, remove fibers part of the vein. Line 13 x 9 x 2 inch pan with ti leaves, radiating from center and extending about 10 inches out of pan. Place roast in center of cloves, rub with soy sauce mixture and a few drops of liquid smoke. Fold leaves over top of roast and secure with string. Place a piece of foil over top of pan and crimp to the edges of pan. Roast at 375 degrees F. for 5 hours.
