Warabi Pinacbet

Ruby Maekawa

  • 1# pork, sliced
  • 1 T salad oil
  • 4 cloves garlic, crushed
  • 3 T Patis
  • 1 cup water
  • 10 dried shrimps
  • 1/4 t MGS (optional)
  • 3 tomatoes, quartered
  • 1 T shoyu
  • Dash of pepper
  • 2 cups warabi, cut into 2″ pieces
  • 2 medium bittermelons, seeded and sliced to desired thickness
  • 2 long eggplants, sliced thin
  • 2 medium Sequa, peeled and sliced or 2 cups sliced hyotan
  • 1/2# long beans sliced into 2″ pieces
  • 2 cups of slice pumpkin
  • Sliced okra if desired

Heat oil and sauté garlic and pork until pork is browned and crisp. Add water, patis, dried shrimp and MGS. Stir in tomatoes and cook until a sauce is formed.

Prepare vegetables. Along with the warabi, you may select some or all of the vegetables.

NOTE: Pumpkin will give a natural sweetness to the dish.

Add all vegetables to the pork mixture. Stir and cook for 10 minutes. Add a dash of pepper and 1 Tablespoon shoyu and cook for 10 minutes more or until vegetables are tender. Serves 4.
