Warabi Pinacbet
Ruby Maekawa
- 1# pork, sliced
- 1 T salad oil
- 4 cloves garlic, crushed
- 3 T Patis
- 1 cup water
- 10 dried shrimps
- 1/4 t MGS (optional)
- 3 tomatoes, quartered
- 1 T shoyu
- Dash of pepper
- 2 cups warabi, cut into 2″ pieces
- 2 medium bittermelons, seeded and sliced to desired thickness
- 2 long eggplants, sliced thin
- 2 medium Sequa, peeled and sliced or 2 cups sliced hyotan
- 1/2# long beans sliced into 2″ pieces
- 2 cups of slice pumpkin
- Sliced okra if desired
Heat oil and sauté garlic and pork until pork is browned and crisp. Add water, patis, dried shrimp and MGS. Stir in tomatoes and cook until a sauce is formed.
Prepare vegetables. Along with the warabi, you may select some or all of the vegetables.
NOTE: Pumpkin will give a natural sweetness to the dish.
Add all vegetables to the pork mixture. Stir and cook for 10 minutes. Add a dash of pepper and 1 Tablespoon shoyu and cook for 10 minutes more or until vegetables are tender. Serves 4.
