Warabi Namasu #1

Harriet Okino

  • 1 bundle of warabi (clean, cut into 1 1/2″ lengths and blanch in hot water)
  • 1 round onion, sliced, soaked in water for 1/2 hour and drained
  • 1 package dried codfish

Sauce:

  • 1/2 cup rice vinegar
  • 2 t salt
  • 1/2 cup sugar
  • 1 t grated ginger
  • 1/2 cup water
  • 1/8 t white pepper

Prepare sauce and add the above ingredients. Chill before serving.
