Warabi Tofu Salad

  • 1 bunch warabi
  • 1 block tofu
  • 10 dried shrimps (ebi)

Dressing:

  • 2 T brown sugar
  • 4 T lemon juice
  • 8 T shoyu (1/2 cup)
  • 6 T vegetable oil

1. Clean warabi and cut into 1 1/2 inch strips. Place into boiling water for about 30 seconds. Drain, then place into iced water for about 15 minutes. Drain again.
2. Prepare dressing by placing all dressing ingredients into a jar and shake well.
3. Cut dried shrimps into half.
4. Cut tofu into 1 inch blocks.
5. Toss warabi, tofu, and dried shrimps with lemon/shoyu dressing.

OPTIONAL: 1/2 cup sliced onions
Shiofuku konbu

The dressing can also be used as a dressing for tossed salad.
