Salted Salmon Mizore Age
Desalted salmon–1 piece per person, sliced into 3 pieces.
Sprinkle dash of salt, gourmet powder, and little mirin. This is called furi-aji.
Dip salmon in egg white and roll in tapioca. Deep fry.
Serve with thin slices of lotus prepared with amazu, and grated daikon and shoyu.
