Stuffed Curried Eggs
- 6 hard cooked eggs
- ¾ tsp. mustard
- 2 tsp. vinegar
- 2 tsp. worcestershire sauce
- 3 tbsp. mayonnaise
Sauce:
- 2 tbsp. butter
- 2 tbsp. flour
- 1 tsp. curry powder
- 1 tsp. salt
- 1 cup milk
Cool eggs, shell and cut into half lengthwise. Remove yolk and mash. Add mustard, vinegar, worcestershire sauce, and mayonnaise. Mix well and stuff into egg white. Place them in a shallow baking dish.
Melt in saucepan the butter. Add flour, curry powder and salt. Cook for 1 minute and stir in slowly the milk. Continue cooking until thickened. Pour over stuffed eggs. Place in oven at 300 degrees for 20 minutes.
