Caballero Casserole
- 2 (15 oz.) can Tamales
- 2 (12 oz.) cans Mexi-corn, not drained
- 1 (14 or 15 oz.) can Pizza sauce
Cut each tamale into 6 pieces. Place half of the tamales in a 2½ qt. casserole. Spread with 1 can corn. Top with remaining tamales and second can of corn. Pour pizza sauce over corn. Spread topping on. Bake at 400 degrees for 30-35 minutes.
Olive Cheese Topping:
- ½ cup flour
- ¾ cup cornmeal
- 1 pkg. cheese sauce mix
- 1½ tsp. baking powder
- 2 tbsp. black olives, chopped
- 1 tsp. salt
- 1 egg
- ¾ cup milk
- ¼ cup cooking oil
In a large mixing bowl combine dry ingredients. Add remaining ingredients and stir until completely mixed. Spread on the tamale and corn layers.
