Stuffed Bitter Melon with Pork Hash
- 4 medium bitter melon
- ½ lb. ground pork
- 2 tbsp. dried shrimps or 4 fresh shrimps, chopped fine
- 1 small piece chung choi, washed and chopped fine
- 3 water chestnuts, chopped fine
- ½ tsp. salt
- 1 tsp. shoyu
- 2 tsp. cornstarch
- 1 bottle black bean sauce
- ½ tsp. sugar
- 1/8 tsp. pepper
Cut bitter melons into 1½” lengths. Remove seeds and parboil 2 minutes. Drain. Mix well remaining ingredients and stuff bitter melon sections with this mixture. Place in pot, add one bottle black bean sauce and simmer 30 minutes.
