Sweet Sour Pig’s Knuckles

  • 1 pr. pig’s feet (chopped)
  • 1 tsp. dau see (salted black beans)
  • 1 clove garlic (crushed)
  • 1 tbsp. oil
  • 1 cup sugar
  • 1 tbsp. red thick shoyu
  • 2 tbsp. plain shoyu
  • 2 cups brown vinegar
  • 2 pieces ginger

Scrape pig’s feet clean. Parboil for a few minutes and drain. Wash and mash dau see with garlic. Stir fry dau see and garlic in oil for 5 seconds.

Add pig’s feet and stir fry for 3 minutes.

Add red thick shoyu and mix well. Then add plain shoyu.

Add 1/3 cup vinegar and simmer until almost dry. Add ginger.

Add another 1/3 cup vinegar and simmer until almost dry.

Continue adding vinegar until the 2 cups have been used up.

Add sugar when 1 cup vinegar has been used. Take care that it does not burn. Stir often. Cook until very tender. Taste before serving.
