Shrimp Gumbo

  • 3 lb. shrimp
  • 2 tbsp. flour
  • 2 round onions, chopped
  • 1 can tomato
  • 1 bay leaf
  • 3 pod garlic
  • 2 tbsp. oil
  • 3 cup okra, chopped
  • 2 tbsp. oil
  • 2 quart water
  • 1 tsp. salt
  • Red pepper (optional)

Peel shrimp uncooked and devein. Heat oil and brown flour. Add shrimp to this for a few minutes stirring constantly. Set aside. Brown okra and onions in oil. Add tomatoes when okra is nearly cooked. Then add water, bay leaf, garlic, salt, pepper. Add shrimp and brown flour mixture to this. Cover and cook slowly for 30 minutes. Serves 6 to 8 people.
