Salmon Tofu Loaf

  • 2 eggs, beaten
  • ¾ cup evaporated milk
  • 1 can mushroom soup
  • 1 large carrot, grated
  • Green onion, parsley
  • 1 block tofu, well drained & cubed
  • ½ can salmon
  • 2 tbsp. shoyu
  • 2 tbsp. oil or melted margarine
  • 1 tsp. salt
  • ½ cup bread crumbs
  • ½ cup chopped onions

Beat eggs; add milk, mushroom soup, shoyu, oil, salt, bread crumbs, salmon, onions, grated carrot. Mix well. Add tofu cubes. Mix well and bake in greased loaf pan at 350-375 degrees F. for 1 hour.
