Salmon Tofu Loaf
- 2 eggs, beaten
- ¾ cup evaporated milk
- 1 can mushroom soup
- 1 large carrot, grated
- Green onion, parsley
- 1 block tofu, well drained & cubed
- ½ can salmon
- 2 tbsp. shoyu
- 2 tbsp. oil or melted margarine
- 1 tsp. salt
- ½ cup bread crumbs
- ½ cup chopped onions
Beat eggs; add milk, mushroom soup, shoyu, oil, salt, bread crumbs, salmon, onions, grated carrot. Mix well. Add tofu cubes. Mix well and bake in greased loaf pan at 350-375 degrees F. for 1 hour.
