Abalone With Oyster Sauce

- 1 can abalone
- 8 c. water
- Pinch of baking soda
- 1 Tbsp. cornstarch
- 1/2 c. abalone stock from can
- Seasonings
- 2 tsp. oyster sauce
- 1 Tbsp. soy sauce
- 1/2 tsp. sugar
- Salt to taste
- Chopped green onions
Bring water to boil in kettle and add abalone and baking soda. Simmer over moderate heat for 1 hour or until tender. Replenish water during simmering if needed. Remove abalone from fire and slice thinly. Put on serving platter. Make sauce by beating seasoning into hot oil in saucepan over moderate heat. Add cornstarch mixed with abalone stock. Stir constantly until sauce thickens and pour over abalone slices. Add chopped onions. Serves 4 or 6.
