Lilikoi Pie

  • 4 eggs, separated
  • 1 cup sugar
  • 1/2 tsp. salt
  • 1/2 cup lilikoi juice
  • 1 pkg. gelatin mix
  • 1/4 cup water
  • 1 tsp. grated rind of orange
  • 1 baked pie shell

Mix gelatin with 1/4 cup water to soften. Combine 4 egg yolks, 1/2 cup sugar, salt, and lilikoi juice and cook over slow fire until thick. Add gelatin and rind; cool. Pour over stiffly beaten egg whites (to which 1/2 cup sugar has been added). Pour into baked pie shell. Chill in refrigerator.
