Steamed Fish

  • ½ lb. fish
  • 1 tbsp. starch
  • 2 tbsp. shoyu
  • 1 tbsp. black beans
  • 1 tbsp. chung choi
  • 1 tsp. sugar
  • ½ tsp. salt
  • 1 tsp. oil
  • 1 piece ginger, crushed & cut fine
  • 1 clove garlic
  • 2 sprigs green onion, cut fine

Clean fish and let dry. Chop chung choi fine; mash black beans. Mix well, ginger, starch, sugar, salt, chung choi, dau see, and oil and rub over fish. Arrange fish in dish and sprinkle with onions. Steam fish 15 to 20 minutes.
