Mini Drumsticks

  • 16 small drumsticks
  • ½ cup soy sauce
  • 1 cup pineapple juice
  • 1 clove garlic, mashed
  • ¼ cup oil
  • 1 tbsp. minced onion
  • 1 tsp. ground ginger
  • ¼ cup firmly packed brown sugar
  • 1 cup beer

Place drumsticks in large bowl. Combine all ingredients except oil, stirring until sugar is dissolved. Pour sauce over chicken to coat all pieces well, cover and marinate at least 2 hours. Heat oil in large skillet. Remove drumsticks from marinade and brown well on all sides. Add about ¼ cup sauce for gravy. Cook till done. Serve with rice or mashed potatoes.
