Chicken Adobo

  • 1 regular size chicken, cut into serving pieces
  • 1 cup vinegar
  • 1 head garlic, mashed
  • 1 tbsp. salt
  • 1tsp. pepper
  • Fresh ginger ½ inch size sliced
  • ¼ cup oil

Clean chicken, cut into pieces. Season with salt and pepper. Place in saucepan and add the ginger, garlic, vinegar. Let simmer until tender. If water is needed, add ¼ cup hot water. Add more salt or soy sauce to taste, if necessary. When meat is tender, saute until brown. Serve hot.
