Stuffed Bitter Melon

- 1 pound bitter melon
Filling for Bitter Melon
- ¾ c ground pork
- ¼ c mashed tuna, canned or any other boiled fish
- ½ c green onion, chopped fine
- 1 egg
- ½ c dried shrimps
- 1 chung choy, chopped fine
- ½ tsp salt
- 1 T shoyu
- 1 tsp sugar
Soak dry shrimps in cold water 1 hour, before preparing. Combine ingredients for filling.
Cut melon crosswise into 2 inch pieces. Remove pulp and seeds from the center. Parboil for 4 or 5 minutes. Drain and run cold water through.
Stuff each piece of melon with the finely minced filling. Arrange for steaming. Simmer for 40 minutes to 1 hour.
