Steamed Chicken

- 12 slices ginger (size of quarter)
- 1 can mushrooms (small)
- 1 chicken (fryer) cut up
- 2 T cornstarch
- 1 1/2 tsp sugar
- 1 tsp salt
- 1 T oil
- 2 tsp soyu
- 2 tsp gin
- (Green onions cut fine)
Salt ginger and let stand for 15 minutes. Pour hot water over, then drain. Drain mushrooms and spread on bottom of pan or dish. Marinate chicken with rest of seasonings and ginger and spread over mushrooms. Steam for 30 minutes or until done, turning and mixing twice. Garnish with green onions.
