Creole Shrimp
- 4 tablespoons Bacon Drippings
- 2 Onions, chopped
- 1 Green Pepper, chopped
- 1-1/2 cups Celery, sliced
- 1 quart canned Tomatoes
- 1 teaspoon Sugar
- 3 tablespoons Tomato Paste
- Salt and Pepper
- 3 cups Shrimp, cooked
Fry onions, green pepper and celery in bacon drippings for 15 to 20 minutes. Add tomatoes, sugar and tomato paste. Let this simmer slowly for 30 to 45 minutes until it reaches a thick consistency. Add salt and pepper. Fifteen minutes before serving, add cooked shrimp.
This should be served with rice.
Yield: 6 to 8 servings
