Baked Mahimahi
- 3 pounds Mahimahi (or any solid white fish like Turbot Cod)
- Salt
- Pepper
- 1/2 cup Sherry
- 1-1/2 cups Mayonnaise
- 1 small Onion, chopped
- Corn Flakes
Skin and filet fish and cut up into serving pieces. Season with salt and pepper. Soak in sherry wine about 1 hour. Drain and pat dry in a pan.
Line baking pan with foil greased with margarine. Arrange fish close together but in one layer only. Mix together mayonnaise and chopped onions. Spread on fish. Crush corn flakes and sprinkle generously over mayonnaise mixture.
Bake in a preheat 425° oven for 20 minutes—or until fish is done. Do not overcook!
