Buttermilk Pancakes
- 1 cup Flour, all purpose
- 1/2 teaspoon Salt
- 3/4 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 Egg, beaten
- 1 cup Buttermilk
- 2 tablespoons Butter, melted
Sift flour, salt, baking powder and baking soda into a mixing bowl. Add egg and stir. Add buttermilk and melted butter and stir just until blended. Do not overmix.
Pour batter onto hot buttered griddle to form pancakes. Cook until bubbles form around the edges of the pancakes. Turn them over and cook until done. Serve with butter and syrup, or try it European style with butter and jam.
Melt the butter on the same griddle you plan to cook the pancakes on.
