Salmon Souffle

- 3 T butter
- 3 T flour
- 1 c evaporated milk
- 1/2 c water
- 1/4 tsp salt
- 4 eggs, separated
- 1 1# can salmon, flaked
Melt butter and blend with flour. Add milk, water and salt, cook till thickened, stirring constantly. Pour over beaten egg yolks, mix well. Add salmon. Fold in stiffly beaten egg whites. Pour into buttered baking dish, place pan in hot water and bake in moderate oven for about 1 hour.
