Warabi, Filipino Version

- 4-5 lbs. warabi (must be fresh)
- 4 Tbsp. salt
- 2 cups soy sauce
- 2/3 cups rice vinegar
- 4 fingers ginger, grated
- 3 tsp. black pepper
- 1 pkg. shredded codfish, ika, or dried shrimp (optional)
- 2 sweet onions, sliced (optional)
- 3 firm tomatoes, diced
Cut warabi into 1-inch pieces. Place in colander, rinse with tap water. Boil water, then add warabi. Stir constantly 3-4 minutes. Do not overcook. Immediately rinse in tap water several times; drain. Soak in tap water 10-15 minutes with 4 Tbsp. salt. Rinse and drain several times until rinse water is fairly clear; drain and set aside.
Mix soy, vinegar, water, ginger and pepper. Add optional codfish, ika or shrimp, warabi and tomatoes. Mix.
Chill before serving.
