Warabi, Filipino Version

  • 4-5 lbs. warabi (must be fresh)
  • 4 Tbsp. salt
  • 2 cups soy sauce
  • 2/3 cups rice vinegar
  • 4 fingers ginger, grated
  • 3 tsp. black pepper
  • 1 pkg. shredded codfish, ika, or dried shrimp (optional)
  • 2 sweet onions, sliced (optional)
  • 3 firm tomatoes, diced

Cut warabi into 1-inch pieces. Place in colander, rinse with tap water. Boil water, then add warabi. Stir constantly 3-4 minutes. Do not overcook. Immediately rinse in tap water several times; drain. Soak in tap water 10-15 minutes with 4 Tbsp. salt. Rinse and drain several times until rinse water is fairly clear; drain and set aside.

Mix soy, vinegar, water, ginger and pepper. Add optional codfish, ika or shrimp, warabi and tomatoes. Mix.

Chill before serving.
