Turkey Tetrazzine

  • 2 cups diced cooked turkey
  • ¼ cup butter or margarine
  • ¼ lb. mushroom sliced
  • ¼ cup flour
  • 2 cups broth or gravy
  • 2 tbsp. Sherry
  • 1 cup evaporated milk
  • Salt and Pepper
  • 1 8 oz. pkg. spaghetti cooked
  • ½ cup grated cheese

Melt butter in a saucepan; add the sliced mushroom, cook 5 minutes. Stir in the flour; add the broth, wine and cream. Stir and cook to boiling; season to taste. In a buttered 2 quart casserole put alternate layers of spaghetti, turkey and mushroom sauce, finishing with a thin layer of spaghetti. Sprinkle with cheese. Bake at 400 degrees about 20 minutes.
