Tomato Beef
- 1 lb. sirloin beef, thinly sliced
- 1 onion, sliced
- 1 green pepper, sliced
- 2 tomatoes, cut in quarters
- ½ stalk celery, sliced
- 4 green onions, cut in ½” pieces
- 1 tbsp. salt
- 1 tbsp. sugar
- 1 tbsp. cornstarch
- 1 1″ piece ginger, crushed
Fry beef well in heated oil with ginger. Add all of the vegetables and stir fry a few minutes, sprinkle the salt over. Combine the sugar and cornstarch with about 1/3 cup water and add to beef-vegetable mixture. Stir until gravy is thickened. Do not overcook vegetables.
