“Strawberry” Papaya Pickle

- 4 c. sugar
- 2 c. vinegar
- 4 bay leaves
- 16 cloves
- 20 peppercorns
- 2 c. water
- 8 c. half-ripe strawberry papayas (sliced 1 1/2-inch lengths)
Make a syrup of sugar and vinegar. Add spices. Cook papaya slices in water for 5 minutes. Drain. Add drained fruit to syrup and cook 15 minutes.
