“Strawberry” Papaya Pickle

  • 4 c. sugar
  • 2 c. vinegar
  • 4 bay leaves
  • 16 cloves
  • 20 peppercorns
  • 2 c. water
  • 8 c. half-ripe strawberry papayas (sliced 1 1/2-inch lengths)

Make a syrup of sugar and vinegar. Add spices. Cook papaya slices in water for 5 minutes. Drain. Add drained fruit to syrup and cook 15 minutes.
