Strawberry Bran Squares
CLASS OF 1961
- 1/2 cup shortening
- 1/3 cup brown sugar
- 1/2 cup light corn syrup
- 1 egg
- 1 cup whole bran cereal
- 2 cups all-purpose flour, stirred before measuring
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup strawberry jam
Cream together shortening and brown sugar. Add corn syrup and egg; beat thoroughly. Stir in cereal. Sift together flour, baking soda, and salt. Add to mixture; blend thoroughly. Press half of dough evenly in bottom of greased 9x9x2-inch square pan. Spread jam over top of dough. Between two pieces of waxed paper, flatten remaining dough into a 9-inch square. Place dough over top of jam. Bake in 375 degree oven 20-25 minutes, or until golden brown. Cool.
Yield: 16 squares
