Yogurt, Cucumber and Tomato

  • 1 small, firm ripe tomato
  • 1 medium-size cucumber
  • 1 Tbsp minced onion
  • 1 Tbsp salt
  • 1 Tbsp finely chopped coriander, optional
  • 1 cup unflavored yogurt

Cut tomato crosswise into 1/2-inch thick rounds, slice into 1/2-inch wide strips, then into 1/2-inch cubes. Peel cucumber, cut in half lengthwise, and scoop out seeds. Cut cucumber halves lengthwise into 1/8-inch slices, then crosswise into 1/2-inch pieces. Combine cucumber, onion and salt; mix well. Let stand at room temperature for 5 minutes. Squeeze the cucumbers gently between fingers to remove excess liquid. Combine with tomato, coriander and yogurt.

Yield: 6 servings
