Spanish Rice

  • 1 cup diced Portuguese sausage
  • 1/2 block margarine
  • 1/4 cup bell pepper, diced
  • 2 small red chili peppers, diced fine
  • 1 onion, diced
  • 1 clove garlic, minced
  • 3 cups cooked rice
  • 1 cup black olives, sliced
  • 1/2 cup catsup
  • 1/2 cup stewed tomatoes

Brown sausage in margarine. Add bell pepper, chili pepper, onion, garlic, rice, and olives. Simmer 10 minutes. Add catsup and tomatoes. Mix well.
Place in large covered casserole and bake at 350° for 20 minutes.
