Salmon Cakes

- 1 pkg. Stove Top Stuffing Mix (any flavor)-I used Herb and Mushroom
- 3/4 c. water
- 1/3 c. mayonnaise
- 2 cans (6-oz. each) salmon
- 1 Tbsp. lemon juice
- 1 c. shredded Mozzarella cheese
- 1/4 c. diced green onions
- Drain salmon. Remove skin and bones. Set aside.
- *Mix stuffing mix with water. Add rest of ingredients. Cover.
- Refrigerate for 10 minutes.
- Spray cooking spray in a large nonstick skillet pan.
- Shape salmon/stuffing mixture into patties.
- Cook about 3 minutes on each side or until golden brown on both sides.
*Note: If mixture seems too dry, add a little more mayonnaise.
