Salmon Cakes

  • 1 pkg. Stove Top Stuffing Mix (any flavor)-I used Herb and Mushroom
  • 3/4 c. water
  • 1/3 c. mayonnaise
  • 2 cans (6-oz. each) salmon
  • 1 Tbsp. lemon juice
  • 1 c. shredded Mozzarella cheese
  • 1/4 c. diced green onions
  • Drain salmon. Remove skin and bones. Set aside.
  • *Mix stuffing mix with water. Add rest of ingredients. Cover.
  • Refrigerate for 10 minutes.
  • Spray cooking spray in a large nonstick skillet pan.
  • Shape salmon/stuffing mixture into patties.
  • Cook about 3 minutes on each side or until golden brown on both sides.

*Note: If mixture seems too dry, add a little more mayonnaise.
