Pineapple Salad Dressing
- 2 tbsp. flour
- 2 tbsp. sugar or honey
- 1/2 tsp. salt
- 1 egg yolk
- 1 cup unsweetened pineapple juice (or 1/2 cup orange juice and 1/2 cup pineapple juice)
- 1 tbsp. sour citrus juice (if desired)
Mix the dry ingredients. Add the pineapple juice slowly, stirring constantly, and simmer for about 10 minutes, or until mixture is thick. Add hot mixture slowly to the slightly beaten egg yolk. If necessary, reheat in the top of a double boiler. If cooked too long, the dressing will curdle.
