Peanut Brittle

  • 1 cup water
  • 2 cups sugar
  • 1 cup corn syrup
  • 2 cups Peanuts or Macadamia nuts
  • 2 tsp. baking soda
  • ½ block butter or margarine
  • ½ tsp. vanilla

Boil together water, sugar, and syrup till 225 degrees. Then add peanuts and boil till 302 degrees. Remove from fire, then add baking soda, butter, and vanilla. Stir until golden color. Pour into greased cookie sheet pan to cool. When cold, break in pieces.

Note: When macadamia nuts are used, boil the first three ingredients till 275 degrees. Then add nuts and follow as above.
