Pancit Mami

  • 1 4 oz. noodles
  • 1/3 cup shredded pork or pork hash
  • ½ cup chicken meat
  • 2 tbsp. chopped green onion
  • 1 bundle long rice, chinese, soak 15 min.
  • 3 fresh large shrimps, chopped fine
  • 2 cloves garlic, chopped
  • 2 tbsp. lard
  • Salt & pepper to taste
  • 2 cup chicken stock

Boil pork and chicken adding little salt till tender. Saute garlic in lard till brown, add chicken and pork. Add chicken stock and long rice, cover. Simmer for two minutes. Season with salt and pepper. Pour over cooked noodles in individual bowls. Top each serving with chopped green onions. Serve hot.
