Oven-Fried Chicken

  • 1 fryer chicken, cut up
  • 1 cup flour
  • 2 t salt
  • 1/4 t pepper
  • 2 t paprika
  • 1/2 cup vegetable oil

Heat oven to 425 degrees. Mix flour, salt, pepper, paprika in paper or plastic bag. Put oil in pan set in oven. Shake 3 or 4 pieces of chicken at a time in the bag to coat thoroughly. Place chicken , skin side down, in a single layer in pan. Bake 20 minutes. Turn skin side up and bake another 20 minutes. For tastier chicken, salt chicken first and let stand for 15 minutes.
