Ono Prune Mui

  • 8 pkg (12-oz) pitted prunes
  • 1 large pkg preserved lemon peel (6-oz), cut in pieces
  • 1 large pkg seedles li hing mui (4-oz)
  • 1 box (1-lb) light brown sugar
  • 3 Tbsp Hawaiian salt
  • 3 Tbsp scotch, bourbon, brandy OR sherry
  • 1 tsp Chinese five spice
  • 10 whole cloves
  • 1½ cups fresh lemon juice (about 7 lemons)

Combine brown sugar, salt, whiskey, Chinese five spice, cloves and lemon juice in large container that can be covered. Add and toss prunes, lemon peel and li hing mui. Let stand for 4 days or longer. Toss mix at least 2 times a day.

Yield: 1 gallon
