Ono Chicken-Pineapple

  • 2 pkgs. chicken (preferably thighs)

Dust with:

  • 1/3 to 1/2 cup of flour
  • 1/2 tsp. celery salt
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp. garlic salt

Put dry ingredients in a paper bag and shake. Add pieces of chicken and shake. Be sure all pieces of chicken are well dusted with the flour-spice ingredients.

Brown chicken in frying pan using frying fat of your choice. Drain frying fat when chicken is brown then pour over the combined mixture of:

  • 3/4 cup of pineapple juice (or syrup of canned chunk pineapple)
  • 2 tablespoons shoyu
  • 2 tablespoons sugar (omit if syrup is used)

Cover and simmer until tender. Before serving add:

  • 1 cup or more of canned pineapple chunks

This chicken-pineapple dish may be served with rice and vegetables or a salad of your choice.
