Mushroom Chicken

  • 1 chicken, 3 lb. dressed
  • 2 cans bamboo shoots
  • 2 packages mushrooms, dry

Seasoning for Chicken

  • 12 pieces of bay leaf
  • 1 tsp salt
  • 1 T shoyu
  • 1/2 cup ginger, cut up in 1/2 inch pieces
  • 1/2 tsp ajinomoto

Cut chicken into 2-inch pieces; brown chicken, cover with cold water and cook slowly until fairly tender.

Cut mushrooms into 1/4″ pieces. Slice bamboo shoots and add both ingredients to chicken. Add seasoning, all except ajinomoto. Add ajinomoto just before serving.
