Minamints
- 3 cups granulated sugar
- 1 cup boiling water
- 1 tbsp. butter
- 2 tsp. essence of peppermint or 2 tsp. vanilla
Stir sugar and boiling water until dissolved and put a cover over the pan until it is boiling well. Remove cover and add butter by standing spoon up in pan and letting it melt off. Boil to hard ball stage (254°). Add peppermint and let boil slightly. Pour in well greased marble slab or pan, floating in sink full of water. Cool and pull until white and creamy. Cut with scissors. Do not stir after it come to a boil and 254° hard ball stage.
