Meat Loaf With Zesty Topping

  • 2 pounds ground beef
  • ¾ cup milk
  • 1½ cups soft bread crumbs
  • 2 teaspoons salt
  • 1/8 teaspoons pepper
  • 1 medium carrot, grated
  • 1 small onion, diced
  • 2 eggs, beaten
  • ¼ cup catsup
  • 3 tablespoons brown sugar
  • 2 tablespoons prepared mustard

Pour milk over bread crumbs. Add ground beef, salt, pepper, carrot, onion and eggs. Mix thoroughly. Pack in a 9 x 5-inch loaf pan. Mix catsup, brown sugar and mustard. Spread catsup mixture on meat loaf. Bake in slow oven (325 degrees) for 1½ hours. Serves 8.
