Meat Balls in Curried Tomato Sauce

  • 1½ lb. ground beef
  • 1 can ( 1 lb. 12 oz.) tomatoes
  • ¾ cup soft bread crumbs
  • ¼ cup chopped onion
  • 1½ tsp. salt
  • 1/8 tsp. pepper
  • ¼ cup flour
  • 3 tbsp. lard or drippings
  • ½ tsp. sugar
  • ½ tsp. curry powder
  • 1/8 tsp. pepper
  • 4 cups hot cooked rice, if desired

Drain ½ cup juice from tomatoes, reserving remaining juice and tomatoes. Pour ½ cup tomato juice over bread crumbs. Add beef, onion, salt and 1/8 tsp. pepper. Mix thoroughly. Shape mixture into 24 balls, using a rounded tbsp. for each. Dredge meat balls in flour. Brown in lard or drippings. Pour off drippings. Add remaining tomatoes and juice, sugar, curry powder and 1/8 tsp. pepper. Cook slowly 20 minutes. Serve over rice if desired. 6 to 8 servings.
