Margarita Delight

  • 1/2 cup lemon or lime juice
  • Coarse salt
  • 1 cup + 2 Tbsp tequila
  • 1/3 cup Cointreau
  • 1/4 cup superfine sugar
  • 2 cups cracked ice

Before squeezing lemons for juice, twirl rims of 8 cocktail glasses on cut lemon surface. Then dip rims of glasses in salt. Refrigerate glasses about 1 hour. Combine lemon juice, tequila, Cointreau, sugar and ice in electric blender; cover and blend at high speed 1/2 minute. Pour into chilled glasses.

Yield: 8 servings
