Mango Chutney

- 14 c. sliced half-ripe mangoes
- 5 lbs. raw sugar
- 1 handful rock salt
- 1 1/2 qts. cider vinegar
- 3/4 c. chopped raw ginger
- 5 red chili peppers – seeds removed
- 1/2 c. chopped garlic
- 1 lb. raisins
- 4 round onions
Sprinkle rock salt on mangoes over night. (Wash roughly.) Boil syrup one hour. Add mangoes and cook one hour.
