Mango Chutney

  • 14 c. sliced half-ripe mangoes
  • 5 lbs. raw sugar
  • 1 handful rock salt
  • 1 1/2 qts. cider vinegar
  • 3/4 c. chopped raw ginger
  • 5 red chili peppers – seeds removed
  • 1/2 c. chopped garlic
  • 1 lb. raisins
  • 4 round onions

Sprinkle rock salt on mangoes over night. (Wash roughly.) Boil syrup one hour. Add mangoes and cook one hour.
