Liver Fritatada

  • 10 slices of beef liver
  • 1 cup chopped tomatoes
  • ½ cup sliced onions
  • 2 tbsp. salad oil
  • 2 medium sized potatoes
  • 1 large sweet pepper (bell)
  • 1 tbsp. crushed garlic
  • Salt and pepper to taste

Slice potatoes in ¼” thick pieces; quarter the sweet pepper. Saute the garlic and onions in the oil; add the tomatoes. Cover and cook for 5 minutes. Add the liver and 1 cup of water. Cover and cook until liver is done. Add the sweet pepper and potatoes. Cook until potatoes are done. Makes 7 servings.
