Kona Coffee Meringue Pie

  • 1/3 cup flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 1-1/2 cups scalded milk
  • 1 cup hot, strong Kona coffee
  • 3 egg yolks, slightly beaten
  • 2 Tbsp butter or margarine
  • 1 baked 8-inch pie shell
  • 3 egg whites
  • 1/8 tsp salt
  • 6 Tbsp sugar

Mix flour, sugar and salt. Gradually add milk and Kona coffee. Cook in double boiler until thick, stirring occasionally. Slowly add small amount of the hot mixture to the beaten egg yolks, then stir into remaining hot mixture. Cook 2 minutes. Add butter. Cool to lukewarm. Pour into baked pie shell. Spread meringue made by beating egg whites and salt until foamy, then adding sugar gradually and beating until stiff. Bake at 350 degrees for 12-15 minutes or until meringue is brown.
