Imo (Sweet Potato) Tempura

Batter – mix altogether:

  • ½ cup water
  • ½ cup sugar
  • 1 tsp. salt
  • 1 egg
  • (4 tbsp. sake, optional)

Mix together and add to side ingredients:

  • ¾ to 1 cup flour
  • 3 tbsp. cornstarch

Slice about 4 potatoes about ¼ inch thick. Dip potato in batter and deep fry until brown, about 4 to 5 minutes. Note: Potato can be rolled in sesame seeds before frying for extra special flavor.
