Hukilau Fish
Heat 1 cup milk, 1 bay leaf, 1 tsp. salt, dash of pepper, in a shallow pan or skillet. When milk is hot, add 1½ lb. fish fillets and simmer 5 minutes or until done. Place fish on broiler grill and top with meringue.
To make meringue: Beat 2 egg whites until stiff and then gradually add ½ cup mayonnaise, 1 tsp. lemon juice and ½ tsp. almond extract (optional).
Garnish each fillet with lemon slice and a slice of olive for eye, and put under broiler for about 1 minute or until meringue is lightly browned. Place quarter-cut lemon to look like tail of the fish and serve immediately. Lemon can be used for squeezing if cut this way. Serves 4 people.
