Hot Chicken Salad

  • 2 cups chopped, cooked chicken
  • 2 cups chopped celery
  • ½ cup chopped salted almonds
  • 1/3 cup chopped green pepper
  • 2 tbsp. chopped pimiento
  • 2 tbsp. minced onion
  • ½ tsp. salt
  • 2 tbsp. lemon juice
  • ½ cup mayonnaise
  • 1/3 cup grated Swiss cheese
  • 1 cup crushed potato chips

Blend chicken, celery, almonds, green pepper, pimiento, onion, salt, lemon juice and mayonnaise. Turn into buttered 1½ quart casserole.

Top with grated cheese and crushed potato chips.

Bake in moderate oven 350 degrees F. for 25 minutes, or until cheese is melted.

Makes 6 to 8 servings.

This dish is fine for a covered dish supper. It will hold the heat and remain in excellent condition for several hours. Along with this it would be nice to serve sliced tomatoes and cucumbers, baking powder biscuits, and ice cream for dessert.
