Hot Browns

Cream sauce:

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. scalded milk
  • 1/2 tsp. salt
  • Pepper

Melt butter; add flour, blend. When smooth add seasoning. Gradually add the scalded milk.

Put piece of toast in individual oven-proof dish. Cover with thin slices of cooked chicken or turkey breast. Add two or three slices of crisp bacon. Spread with grated cheese. Run under the broiler until bubbling hot. Serve with sliced tomatoes and cream sauce.
