Homemade Sausage
- 1/2 can (30 oz. can) luncheon meat
- 2 slices bread, pulled apart into small pieces
- 1 egg
- 1 Tbsp. poultry seasoning
- 1/2 tsp. red pepper
Mash 1/2 can (30 oz. can) luncheon meat with a fork (or clean hands). Add 2 slices bread, pulled apart into small pieces, 1 egg, 1 Tbsp. poultry seasoning, 1/2 tsp. red pepper and mix well. Shape into small thin cakes or baby sausage. Heat an ungreased skillet on medium heat until hot. Add sausages and turn heat low. Brown slowly on one side and then turn and brown the other side.
Makes 6 – 8 servings.
